CAULIFLOWER CHEESY CASSEROLE 
3 c. cauliflower, cut in pieces (broccoli may be used or half and half)
1/2 jar pimento
2 tbsp. chopped green pepper
1 can sliced water chestnuts
2 hard cooked eggs (optional)
1 sm. onion, chopped
1 c. grated cheddar cheese

SAUCE:

4 tbsp. butter, melted
3 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
1 c. American cheese, cubed

Cook as for white sauce. Add cheese and stir well.

TOPPING:

1 - 2 c. cheese crackers (crushed)
3 tbsp. Parmesan cheese

Cook cauliflower (or broccoli); green peppers; and onion together until almost tender. Drain. Add chestnuts; eggs (chopped), cheese and pimentos. Pour into greased baking dish (2 1/2 quart size). Cover with sauce and mix gently. Sprinkle topping over all. Bake at 350 degrees for 30 to 45 minutes.
