BRAZIL NUT SENSATION | |
1 c. maraschino cherries 3/4 c. sifted all purpose flour 3/4 c. granulated sugar 1/2 tsp. baking soda 1/2 tsp. salt 3 c. shredded Brazil nuts 1 lb. pitted dates 3 eggs 1 tsp. vanilla extract Preheat oven at 300 degrees. Grease 9"x5"x3" pan and line with wax paper. Sift flour, salt, soda and sugar in large bowl. In another bowl put nuts, cherries and dates. Stir the dry ingredients into fruit and mix well with hands. Beat eggs until foamy, add vanilla and stir in fruit mixture. Spread evenly in pan and bake for one hour and 45 minutes. Remove from pan; peel off paper, cool on rack, wrap in aluminum foil. Store in refrigerator. |
