MOLDED FRENCH CREAM WITH
STRAWBERRIES
 
1 c. sour cream
1 c. heavy cream (whipping)
3/4 c. super fine granulated sugar
1 envelope unflavored gelatin
1/4 c. water
8 oz. cream cheese, softened
1 tsp. vanilla

Beat sugar into the sour cream and heavy cream, warm over very low heat. Dissolve gelatin in the water. After it softens, heat in microwave a few seconds to dissolve. Stir dissolved gelatin into the warm cream mixture and remove from heat. Beat cream cheese until light with electric mixer. Stir in the cream mixture and vanilla, blending thoroughly. Pour into a 4 cup mold coated with vegetable oil. Refrigerate 4 hours. Unmold and serve with fresh strawberries. Serves 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
