NEW ENGLAND FISH CHOWDER 
6 slices salt pork, diced
1 lg. onion, chopped
6 potatoes, peeled and diced
2 c. water
1 tsp. salt
2 lbs. cod, haddock, or pollock, skinned, boned and cut into chunks
1 lb. sea scallops, cut in half
4 c. hot milk
2 c. light cream
1/4 c. butter

Cook salt pork until crisp. Add onion, potatoes, water and salt. Simmer, covered, until almost tender. Add fish and scallops and hot milk. Simmer over low heat 10 minutes. Add cream, slowly, and butter. Reheat, but do not boil.
