TEXAS JAILHOUSE CHILI 
1 lb. ground chuck
1 onion, chopped
1 garlic clove, minced
2 heaping tbsp. chili powder
1 heaping tbsp. cumin
Salt & pepper to taste
1 can tomatoes
1 can green chilies, chopped
1 can tomato sauce
1 can pinto beans or kidney beans

Saute chuck, onion and garlic until light brown. Take off of heat while hot adding chili powder, cumin, salt and pepper. Add tomatoes and green chilies. You may need more, taste for sure. Add tomato sauce and beans. Simmer for 15-20 minutes. Serve with crackers.
