TEXAS RED CHILI 
1/8 lb. suet, finely chopped
3 lb. round steak, coarsely ground or cubed
6 tbsp. chili powder
1 tbsp. ground oregano
1 tbsp. cumin
1 tbsp. salt
1/2-1 tsp. cayenne
2 cloves garlic, minced
1 1/2 qts. water
1/2 c. white cornmeal

In Dutch oven, fry suet until crisp; add steak cubes and brown. Add seasonings and water, heat to boiling. Reduce heat, cover and simmer 1 1/2 hours. Skim off fat. Stir in cornmeal and simmer, uncovered for 30 minutes. Stir occasionally. Serve with pinto beans and corn bread. Serves 8-10. No tomatoes are used in this recipe.
