TEXAS - STYLE CHILI | |
5 lbs. cubed beef chuck 1/2 c. olive oil 1/2 c. flour 1/2 c. chili powder 2 tsp. cumin 2 tsp. oregano 3 cloves minced garlic 1 qt. beef broth 1 tsp. salt 1/4 tsp. fresh ground pepper Brown meat in oil. Sprinkle with flour and chili powder. Cook, stirring, 3-5 minutes, until meat is coated with flour and chili powder. Sprinkle cumin and oregano over meat. Add garlic, beef broth, salt and pepper. Bring to a boil; cover and simmer very slowly over low heat or put in crockpot for as long as 24 hours. More broth may be added during cooking. |
