2 c. flour 2 tsp. baking powder 1 1/2 tsp. baking soda 1 tsp. salt 2 tsp. cinnamon 1 1/2 c. oil 4 eggs 2 c. grated carrots 1 sm. can crushed pineapple, drained 2 c. sugar 1 c. pecans, cut up 1/2 c. butter 8 oz. cream cheese 1 tsp. vanilla 1 lb. powdered confectioners' sugar Sift together flour, baking powder, baking soda, salt and cinnamon. Stir in oil, eggs, carrots, pineapple, sugar and pecans. Bake in 9 x 13 inch plus one 8 x 8 inch pan, or one large pan at 350 degrees for 30-40 minutes. Frost with frosting made by beating until smooth the butter, cream cheese, vanilla and powdered sugar. |
