SWEET POTATO APPLE SCALLOPS 
3 lg. boiled sweet potatoes (or 23 oz. canned)
2 c. sliced, peeled apples (or Comstock canned)
3/4 c. white sugar
1/4 c. melted butter
1/2 tsp. salt
Dash of ginger, nutmeg, cloves
1/3 c. orange juice
Grated rind of 1 orange

Alternate layers of apple and potato in greased baking dish. Mix sugar, rind, butter and spices into a paste and spread over top. Pour juice over and bake at 350 degrees for 45 minutes, covered and then uncovered for 20 minutes. (Even if you hate sweet potatoes, you'll love this.)
