APPLE CORN MUFFINS 
3/4 c. whole grain flour
2/3 c. whole grain cornmeal
1 tsp. Rumford baking powder
1 apple, finely grated
2 stiffly beaten egg whites
1/2 c. unfiltered apple juice
1/4 c. pureed dates or date powder

Blend all ingredients together; mix well. Pour into non-stick muffin pan 2/3 full and bake in preheated oven for 15 to 20 minutes or until done. Makes 8 muffins.
