CORN CASSEROLE 
1 (16 oz.) can white corn
1 (16 oz.) can cream corn
2 well beaten eggs
1 (8-1/2 oz.) box corn muffin mix
1/2 c. onions, sauteed in 1/4 c. butter
1 c. sour cream
1 c. grated cheddar cheese
1/3 c. sugar (optional)

Mix corn, onions, eggs, and 1/2 of corn muffin mix together. Pour in 8 x 8 or 9 x 9 inch baking dish. Spread sour cream over top and spread grated cheese over sour cream. Sprinkle remaining corn muffin mix on top. Bake at 350 degrees for 30 to 35 minutes.
