ZUCCHINI PANCAKES 
1 1/2 lbs. zucchini
2 tsp. salt
2 eggs, beaten
3/4 c. flour
1/4 c. cornmeal
1/2 tsp. lemon pepper
1/2 tsp. onion powder
1 1/2 tbsp. grated Parmesan cheese
3 tbsp. cooking oil

Grate zucchini, sprinkle with salt and mix, let stand for 15 minutes. Pour off any liquid. Repeat, pressing and draining off liquid. Add beaten eggs to zucchini. Combine flour, cornmeal, pepper, onion and Parmesan. Mix. Drop batter on heat oiled skillet. Brown both sides.
