2 c. zucchini, drained
1 egg
1 sm. onion
1 c. flour or pancake mix
1 tbsp. cooking oil
1/2 tsp. salt

Grate zucchini. Mix all ingredients together. Cook on lightly greased pan. Turn when golden brown.
