2 tbsp. butter
2 eggs
1 c. milk
1/2 tsp. salt
1 c. all-purpose flour

1. Preheat oven to 400 degrees. Put 1/2 teaspoon butter in each of 12 muffin pan cups.

2. Beat eggs in a bowl with milk and salt. Add flour and beat just until mixture is smooth.

3. Spoon batter evenly into the 12 buttered cups.

4. Place muffin pan on bottom metal rack. Cook in convection oven 30-35 minutes at 400 degrees or until deep golden brown and set.
