PORK CHOP CASSEROLE 
6 to 8 pork chops
Salt and pepper
2 med. sweet potatoes (sub. white potatoes if you like), peeled and sliced
1 lg. onion, sliced
1 lg. green pepper, sliced
1/2 tsp. leaf oregano
1/4 tsp. whole thyme
1 (1 lb.) can tomatoes

Trim fat from pork chops, season with salt and pepper and brown in skillet to remove excess fat. Drain and place in crock pot. Add remaining ingredients in order listed. Cover and cook on low 8 to 10 hours. (High 3 to 4 hours.)
