BEST HOMEMADE VANILLA ICE CREAM 
4 QUARTS:

4 eggs
2 1/4 cups sugar
2 (12 oz. ea.) cans evaporated milk
5 cups whole milk
4 1/2 tsp. vanilla
1/2 tsp. salt
1 (14 oz.) can Eagle Brand sweetened condensed milk

6 QUARTS:

6 eggs
3 3/4 cups sugar
3 (12 oz. ea.) cans evaporated milk
1/2 gallon (8 cups) milk
6 3/4 tsp. vanilla
3/4 tsp. salt
1 (14 oz.) can Eagle Brand sweetened condensed milk

Beat eggs until foamy. Add sugar gradually. Beat until stiff. Add remaining and mix extremely well. Pour into ice cream freezer and freeze using rock salt and ice. Great with homemade hot fudge sauce!

HOMEMADE HOT FUDGE SAUCE:

1 tbsp. butter
1 (1 oz.) sq. unsweetened chocolate
1/3 cup boiling water
1 cup sugar
2 tbsp. white Karo corn syrup
1/2 tsp. vanilla
1/8 tsp. salt

Melt butter in saucepan. Add chocolate and stir over low heat until melted. Add boiling water slowly, stirring constantly and bring to a boil. Add sugar and corn syrup, stir until dissolved. Simmer 5 minutes, watch carefully, then add vanilla and salt; mix well. Makes 1 cup.

Great over homemade ice cream!

Had 2 freezers going for a large party, made pineapple and chocolate for the pineapple. I just added a large can of crushed pineapple to mixture. Everyone said it was the best ice cream they had eaten. Best ice cream ever!

Easy recipe but try substituting honey instead of granulated sugar. One cup of sugar = 3/4 cup of honey. It gives the vanilla ice cream a smoother texture and it is actually better for you. Oh, and it tastes fantastic!!

This is a good recipe I cook it though because of eggs. Also if you like coconut add 1 teaspoon to it. It will be the best ever coconut ice cream you ever tasted! I did this by accident when I confused the vanilla flavoring and coconut I had lol. Best mistake ever!

Hi Vicky, when you cook yours, do you heat the eggs with milk, then cool and whip and follow the recipe or do you follow the recipe as listed and then cook after it's all mixed together. Thanks!

I'm not sure I made this correctly. The flavor is spot on! I fooled the recipe as best add i could. The eggs got foamy (how foamy are they supposed to be?). However, it says to beat mixture until stiff. Mine only got got to the consistency of cake batter. Very thick but not stiff. It didn't set up very well. I had it churning in ice cream maker for an hour and it was soupy. I froze the finish product over night and it did freeze but turned out very grainy. I'll keep at this until I get it right. Thanks for this delicious recipe.

The recipe calls for whole eggs. The eggs are what will thicken the ice cream.
