CAJUN BOILED SHRIMP 
1 lb raw, de-veined
1 tbsp. seafood boil or pickling spices*

Add 1 tablespoon shrimp or crab boil or pickling spices (or substitute lemon juice, celery stalk, pepper corns, bay leaves, paprika and salt) to 1 quart of water and bring to a boil.

Add shrimp and bring to a boil again. Reduce heat to a low simmer. Cover saucepan and cook 2 to 5 minutes, never longer. Drain shrimp.

Serve cold.
