ENCHILADA CASSEROLE 
2 lb. lean ground beef
1/2 lb. Velveeta cheese
1 pkg. corn tortillas
1 med. onion, diced
3 (12 oz.) cans mild enchilada sauce
2 (12 oz.) cans hot enchilada sauce

Brown ground beef in a skillet. Cut cheese into 1/2 inch cubes and cut the tortillas into quarters. Mix diced onions and enchiladas sauce in a bowl. Put a layer of tortillas on the bottom of a large casserole dish or pot. Add a layer of browned ground beef, then a layer of sauce, then a layer of cheese. Keep on putting the ingredients in layers until ingredients are all in the dish. Bake at 450 degrees for 20-30 minutes. Serves 8.
