POPOVER CHICKEN TARRAGON 
2 1/2 to 3 lb. broiler-fryer chicken, cut up
2 tbsp. cooking oil
Salt & pepper to taste
3 eggs
1 1/2 c. milk
1 tbsp. cooking oil
1 1/2 c. all-purpose flour
3/4 tsp. dried tarragon, crushed
3/4 tsp. salt

Preheat oven to 350 degrees. In a skillet brown cut up chicken in cooking oil; season with salt and pepper. Place in a well-greased 13 x 9 x 2 inch baking dish.

In a mixing bowl, beat eggs; add milk and cooking oil. In a separate bowl, stir together flour, tarragon and salt. Add to egg mixture. Beat until smooth. Pour over chicken pieces in dish. Bake in a 350 degree oven for 55 to 60 minutes or until done. Serves 6.
