HUMMUS 
4 c. (about 2 lg. cans) chick peas, drained
2-3 med. cloves minced garlic
1 tsp. salt
Juice from 2 med. lemons
3/4 c. tahini (sesame paste)
1/4 c. (packed) finely minced parsley
Lots of freshly ground black pepper
Dash of cayenne
1/4 c. minced scallions

Mash chick peas to a thick paste. Combine everything and chill thoroughly. Taste to correct seasonings. Serve with hot wedges of wheat or white pita bread.
