CHINESE CHICKEN 
3 tbsp. oil
1 clove garlic, pressed or 1/8-1/4 tsp. powder
1 green pepper
8 green onions
2-3 stalks celery
2-4 whole chicken breasts

Remove bones from chicken, cut meat into 1 inch pieces. Mix garlic, 1 tablespoon oil, 1 tablespoon soy sauce, 1/2 teaspoon salt, 1/4 teaspoon pepper and 1 teaspoon cornstarch. Pour over chicken and marinate for 20 minutes or longer. Cut pepper, onions and celery into 1 inch pieces.

Heat 2 tablespoons oil and saute peppers 3 minutes. Add onion and celery; saute 2 minutes. Remove vegetables to dish. Cook chicken in remaining oil for 3 minutes.

Mix 1 tablespoon soy sauce, 1 teaspoon cornstarch, 1/4 teaspoon sugar and 1 cup cold water. Add to chicken and vegetables in pan. Cook 3 minutes longer. Serve over rice.
