ZUCCHINI PANCAKES 
2 c. shredded zucchini, unpeeled and drained
2 eggs, slightly beaten
1/2 tsp. onion powder
Salt and pepper to taste
1/2 c. pancake mix
1 oz. grated Parmesan cheese

Mix all ingredients together and fry immediately in a non-stick pan or spray pan with a vegetable spray. Makes 6 pancakes. Equal to 2 vegetable, 3 meats and 3 bread exchanges.
