APRICOT CHEESE SALAD 
1 #2 can apricots (drained and cut)
1 #2 can crushed pineapple, drained
2 pkg. orange and lime Jello
2 c. boiling water
1 c. apricot-pineapple juice
1 c. mini-marshmallows

Chill fruit. Dissolve Jello in water and juice. Chill until slightly hard. Fold in fruit and marshmallows. Put in 11 x 7 x 2 inch dish and chill firm.

TOPPING:

1 c. apricot-pineapple juice
1/2 c. sugar
3 tbsp. flour
1 egg, slightly beaten
2 tbsp. butter
1 c. whipped cream or Dream Whip
3/4 c. grated cheese

Combine sugar, flour, egg; gradually add juice and butter. Cook over low heat until thick. Cool. Fold into whipped cream; spread over chilled Jello and top with cheese.
