COWBOY STEW | |
6 slices bacon 1 c. sliced onions 1/2 c. chopped green pepper 1 clove garlic, crushed 1 1/2 lb. hamburger 2 (1 lb.) cans tomatoes 1 tsp. salt 1/4 tsp. pepper 1 tsp. chili powder 1 can whole kernel corn, drained 2 c. cubed potatoes Cook bacon until crisp. Drain and crumble. Saute onion, green pepper and garlic in bacon drippings. Add ground beef; cook until brown. Add tomatoes, salt, pepper and chili powder. Cover. Simmer 30 minutes. Add corn and potatoes. Simmer 15 minutes. Sprinkle with bacon. Yield 8 servings. |
