HOMINY CASSEROLE | |
1/4 c. chopped onion 2 tbsp. butter, melted 2 (15 1/2 oz.) cans hominy, drained 2 (4 oz.) cans chopped green chilies 1 (8 oz.) carton sour cream 1 tsp. chili powder 1/4 tsp. salt 1/8 tsp. pepper 1 1/2 c. shredded Cheddar, divided Saute onion in butter in a large skillet for 5 minutes. Add next 6 ingredients and 1/2 cup cheese; mix well. Pour into a lightly greased 10 x 6 x 2 inch baking dish. Bake for 20 minutes at 400 degrees. Sprinkle remaining 1 cup cheese over top; bake an additional 5 minutes or until cheese is melted. 8 servings. |
