DAVE'S ARIZONA CHILI | |
2 tbsp. oil 1 Pippin apple, chopped 1 lg. onion, chopped 1 green pepper, chopped 2 garlic cloves, minced or 1 shallot 1 lb. pork, cubed 1 lb. beef, cubed 1 (28 oz.) can tomatoes, chopped 3/4 c. water, or red wine, burgundy 1 tbsp. chili powder 1/2 tsp. cayenne pepper 1/2 tsp. black pepper 2 1/2 tsp. oregano 1 tsp. ground cumin 2 tsp. salt 2 tbsp. sesame oil; optional 3 (15 1/2 oz.) can beans; 1 pinto, 1 dark red kidney, 1 light kidney You may use all one type of beans if preferred. In a large pot, saute onion, green pepper, apple, garlic in oil for about 5 minutes. Add meat and brown. Add remaining ingredients and simmer covered for 1 1/2 to 2 hours. |
