CHICKEN POCKETS 
1 1/2 c. cubed cooked chicken breast
1/2 c. shredded carrot
1/2 c. diced celery
1/3 c. seedless raisins
2 1/2 tbsp. plain low fat yogurt
2 tbsp. reduced calorie Italian dressing
2 (6 inch) whole wheat pita bread rounds, halved

Combine all ingredients, toss, cover and chill. To serve spoon 1/2 cup chicken mixture into each pita half. 4 servings.

This was the first pita recipe I tried. I didn't even have a shredder, I had to slice the carrots! I do like it. Only thing I did differently was to mix the yogurt and italian dressing seperately, then added to everything else. I got about 4 servings out of it no problem. Oh and I did sub turkey for the chicken. I think it is Butterball that has cubed turkey meat that is a bit better for the diet than chicken. Found in the sandwich meat section
