APRICOT MARMALADE | |
1/2 lb. dried apricots (cut in small pieces); you can use an 11 oz. pkg. 1 orange 1 lemon 4 c. water 4 c. granulated sugar Soak the apricots overnight in 3 cups of water. Slice thinly the orange and lemon and soak overnight in 1 cup of water. Next morning cook orange and lemon mixture for 10 minutes. Add sugar and apricots. Cook over medium heat, stirring frequently (about 25 to 30 minutes) until right consistency. If desired, add 1/4 lb. blanched, sliced almonds or maraschino cherries. Seal in jars while hot. |
