MRS. D.'S PUMPKIN CUSTARD PIE 
1 1/2 c. pumpkin
6 c. canned evaporated milk
3 eggs
2 1/2 c. sugar
4-5 tsp. cinnamon to taste
3 tbsp. flour

Beat egg yolk. Add pumpkin and milk. Mix flour, cinnamon and sugar together. Add to pumpkin mixture. Beat egg whites really stiff and fold into other ingredients. Pour into unbaked pie crust.

Bake 15 minutes at 450 degrees, then 45 minutes at 350 degrees (1 hour all together) or until knife inserted in center comes out clean.
