PINEAPPLE CHEESE PIE (Sugar
Free)
 
1 c. natural pineapple
1 env. Knox gelatin
1 1/4 c. cottage cheese
1 egg
4 packs Equal
1 tsp. vanilla extract
1 tsp. lemon juice

Mix together in blender in order given. Whirl on high speed until it makes a whirlpool in center. Pour into a Pam sprayed glass pie plate. Sprinkle with cinnamon.

Microwave on 60% power, 30 minutes, using a turntable or rotate every 10 minutes. Or bake in 350 degree oven 30 minutes. Refrigerate until firm. Serves 6.

Optional: Other fresh fruit or drained canned fruit can be put in dish after spraying and gently pour cheese mixture over. 1/6 of this pie equals a Diet Workshop breakfast: 1/2 equals a lunch.

Since microwave ovens vary in power, you may need to adjust your cooking time.
