MEXICAN FRUIT SALAD 
1 cantaloupe, chopped
2-3 jalapenos, minced
1 1/2 c. chopped bell peppers (red, yellow green)
1/2 c. chopped sweet onions
1 1/2 c. chopped jicama
3-4 chopped scallions
1/3 c. chopped cilantro
Honey or sugar (optional)

DRESSING:

3 tbsp. lime juice
3 tbsp. olive oil
3 tbsp. sherry vinegar

Mix all together. Chill. Yummy and refreshing!
