COUNTRY POTATOES 
6 med. potatoes, peeled & quartered
1/2 c. butter
3/4 c. chopped green onions with tops
1 c. sour cream
1 1/2 c. grated sharp cheddar cheese
Salt & pepper to taste

Cool, drain and mash potatoes, leaving a little lumpy. Mix in remaining ingredients, except cheese. Pour into buttered 1 1/2 quart casserole dish. Top with cheese. Bake 20 to 30 minutes at 325 degrees. Serves 6 to 8.
