CHERRY STREUSEL CAKE 
1 c. butter
1 3/4 c. sugar
4 eggs
1 tsp. vanilla
1/2 tsp. salt
3 c. flour
1 1/2 tsp. baking powder
1 can cherry pie filling of your choice

Cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well. Add vanilla. Add sifted dry ingredients and mix well. Spread in 11 x 17 inch pan, leaving 1 1/2 cups. Spread filling over batter gently using spatula. Drop remaining batter from a spoon over the filling. Bake at 350 degrees for 45 minutes. When cool sprinkle with powdered sugar.

MOCK WHIPPED CREAM FROSTING:

1 c. milk
2 tbsp. cornstarch

Cook and stir until thick. Let cool.

Beat: 3/4 c. spry 1 tsp. vanilla

Add cooled mixture and beat hard.
