CHERRY STREUSEL CAKE | |
1 c. butter 1 c. sugar 2 eggs 2 c. flour 2 tsp. baking powder 2 1/2 c. berry filling or 1 can fruit pie filling TOPPING: 2 tbsp. butter 1/4 c. sugar 1/4 c. flour Whipping cream Cream butter and sugar. Add eggs. Beat. Add sifted dry ingredients and mix well. (Batter will be heavy.) Spread about 3/4 of batter in an ungreased 9 x 13-inch pan. Pour filling down center of batter. Spread filling over batter gently. Drop remaining batter from spoon over filling. Spread gently and swirl over all. Combine topping ingredients and sprinkle on top. Bake for 45 minutes at 350 degrees. Cool and serve with whipped cream. (I use "Wilderness" or "Thank You" fruit pie filling - my favorite is apricot.) |
