THREE BEAN SALAD 
1 can kidney beans
1 can cut green beans
1 can cut wax beans
1 purple onion, sliced thin
1 green pepper, sliced thin
2/3 c. cider vinegar
2/3 c. safflower oil
3/4 c. sugar
1 tsp. salt
1 tsp. ground pepper

Rinse and drain beans. Toss with sliced onions and pepper. Make dressing of vinegar, oil, sugar, salt and pepper. Pour over bean mixture. Marinate for 24 hours in covered glass dish. Stir occasionally. This keeps well.

For Italian variation: Substitute olive oil for safflower oil. Add a little garlic powder and some crushed mint leaves.
