SEAFOOD CREOLE 
1 green pepper, chopped
1/2 c. onion, chopped
1/2 c. celery, diced
1 clove minced garlic
2 tbsp. Wesson oil
1 (6 oz.) can tomato paste
1 1/2 c. water
1 bay leaf
1/4 tsp. thyme
1/8 tsp. pepper
2 c. shrimp, boiled and peeled

Cook vegetables in oil until tender. Add seasonings, tomato paste and water. Simmer for about 15 minutes. Stir occasionally, add shrimp until hot. Crab can be used instead of shrimp.
