CHICKEN A LA MARIA 
3/4 c. fine dry Italian seasoned bread crumbs
2 tbsp. grated Parmesan cheese
6 whole lg. chicken breasts (about 6 lbs.)
1/2 c. sliced green onion
2 tbsp. butter
2 tbsp. all-purpose flour
1 c. milk
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
3/4 c. diced fully cooked ham

Skin, bone, and halve chicken breasts lengthwise.

Combine bread crumbs and cheese; reserve half for topping. Rinse chicken and pat dry. Dip chicken in crumb mixture to coat lightly. Place in a 13 x 9 x 2- inch baking dish.

In a small saucepan cook onion in butter until tender. Stir in flour until well blended. Add milk. Cook and stir over medium heat until thickened and bubbly. Stir in spinach and ham. Spoon spinach mixture over chicken; sprinkle with remaining crumb mixture.

Bake uncovered in a 350 degree oven for 40-45 minutes or until chicken is no longer pink. Serves 12.
