“BEEF & CORN BREAD CASSEROLE” IS IN:

BEEF & CORN BREAD CASSEROLE 
I do my casserole in a cast iron skillet.

1 lb. ground beef
1/2 large onion, chopped
salt and pepper to taste
1 (6 oz.) pkg. cornbread mix (not cornbread muffin mix)
1 (17 oz.) creamed corn
1 egg, lightly beaten
1 (7 oz.) can chopped green chilies
8 oz. grated cheddar cheese

Brown & drain meat and onion. Season to taste with salt/pepper. In bowl, combine cornbread mix with the corn and egg (no milk). Spread half of the batter in a shallow baking dish, it will be thin. Spoon ground beef evenly on top. Next top this with the chilies and the cheese. Add remaining cornbread batter. Bake uncovered 350°F for 40-45 minutes until golden brown and sizzling.
