RED RAISIN CORNISH HENS 
1 (6 oz.) pkg. Stove Top stuffing mix
4 cornish hens
Salt & pepper

SAUCE:

1 (10 oz.) jar red currant jelly
1/2 c. golden raisins
1/4 c. butter
2 tsp. lemon juice
1/4 tsp. allspice

Mix stuffing according to package directions and stuff hens. Sprinkle with salt and pepper. Place hens in a roasting pan.

In saucepan, combine jelly, raisins, butter, lemon juice and allspice. Cook on low heat until blended. Brush some of the sauce on the hens. Roast hens for 1 hour at 350 degrees. Brush hens with sauce once during cooking. Spoon remaining sauce over hens at serving time. Makes 4 servings.
