CORNISH HENS WITH APPLE AND
WALNUT DRESSING
 
2 Cornish Hens, paprika, salt, pepper, oil
1 c. cooked wild rice
2 tbsp. minced celery
2 tbsp. minced onion
1/4 c. walnut pieces
1 apple cored and chopped
2 tbsp. Port wine
1 tsp. parsley

Preheat oven to 350 degrees. Wash hens and pat dry. Season with salt, paprika and pepper. Rub lightly with oil. Combine remaining ingredients and toss lightly. Stuff hens and truss. Place hens in uncovered roasting pan and roast 1 hour or until tender.
