CORNISH HENS WITH APPLE GLAZE 
4 Cornish hens, about 1 pound each
1 c. undiluted frozen apple juice, thawed
1/2 tsp. ground cinnamon
1 tbsp. corn starch
3 lemon slices
Wild rice stuffing (optional) -

Wash the hens and arrange them in a small roasting pan. Fill hens with a stuffing of your own choice. (Suggestion: Prepare one package wild rice mix; add sliced apples, raisins, celery, fresh mushrooms - sliced and sauteed).

In a saucepan, combine the apple juice, cinnamon and corn starch. Mix until smooth. Add the lemon slices. Cook and stir the apple juice mixture over a medium heat until the mixture thickens. Brush this glaze over the hens.

Roast the hens in a 375 degree oven for 1 hour or until they are fork tender, basting with additional sauce several times during cooking.

Cut the hens in half and serve with fresh steamed vegetables and green salad.

Serves 8.
