CHOPPED CHICKEN LIVERS 
2 tbsp. vegetable oil
2 tbsp. chopped onion
1/2 lb. chicken livers
2 tbsp. water
2 hard cooked eggs, chopped
1/2 tsp. salt
Few grains pepper
2-3 tbsp. chicken broth

Heat oil in skillet; add onion and cook over moderate heat until tender, stirring occasionally. Add chicken livers and cook until lightly browned. Add water, cover and cook slowly 10 minutes. Cool and chop livers finely.

Mix chopped livers, chopped egg, salt and pepper. Stir in enough chicken broth to moisten mixture. For diet serving allow 2 ounces liver mixture (123 calories). Serves 4. (Can also be put into a blender and made into a pate. Spread on a variety of crackers.)
