REFRIED BEANS 
1 lb. pinto beans
1 tsp. salt
1/4 c. cooking oil
1/4 lb. Monterey cheese, if desired

Leave beans in water overnight. The next morning bring 1 1/2 quarts of water to a boil. Once it is boiling add the uncooked beans and salt. Cook until soft to the touch. While cooking check for water, you may need to add some more. Once beans are fully cooked, add oil and smash the beans to your taste. Once all this is done you can put some cheese is with the beans for more flavor. You could also sprinkle cheese on top of the beans for decoration and taste. Serve hot.
