TABOULAH 
1 c. cracked wheat (Bulgar)
3 3/4 c. fresh parsley, finely chopped
6 med. red tomatoes, chopped
3/4 c. mint leaves, finely chopped or 1/2 c. dried mint
2 lg. onions, finely chopped
1 c. olive oil
1/2 c. lemon juice
2 1/2 tbsp. salt
A dash of black pepper

Wash and drain bulgar wheat. Add lemon juice, chopped parsley, fresh chopped or dried mint, chopped tomatoes, chopped onions. Mix well. Then add olive oil, lemon juice, salt and pepper. Mix very well. Serve on a bed of lettuce leaves.
