STRAWBERRY CHEESE CAKE - LOW CAL 
1 tbsp. unflavored gelatin (1 env.)
1/4 c. cold water
1/2 c. boiling water
2/3 c. ricotta cheese (skim or low-fat)
Artificial sweetener to equal 5 tsp. sugar or less
1/2 tsp. vanilla extract
1/2 tsp. strawberry extract
1/3 c. non-fat dry milk
1 c. partially defrosted unsweetened strawberries
Or pineapple unsweetened

Combine gelatin and cold water in blender. Add boiling water and stir to dissolve. Add ricotta (you can use cottage cheese in place of ricotta), sweetener, vanilla, strawberry extract and milk. Blend until creamy. Slice strawberries into pie dish. Pour mixture over berries. Chill. Makes 1 serving.
