GREEK RICE PUDDING 
6 c. milk
1 c. sugar
1/2 stick butter OR 4 tbsp. butter
1/4 tsp. salt
1 c. UNCLE BEN'S® rice (uncooked)
2 eggs
1 1/2 tsp. vanilla

Combine milk, sugar, butter, and salt in a large saucepan. Bring to a boil. Add rice; reduce heat to low. Cover and cook 1 hour, stirring gently every 15 minutes. Beat the eggs in a separate bowl then add about 1/2 of the hot mixture to the eggs, stirring constantly. Pour this mixture back into the saucepan containing the rest of the mixture and heat, stirring for a couple of minutes. DO NOT BOIL. Remove from heat, stir in vanilla. Pour into serving dishes and chill.
