Preheat oven to 425 degrees.
In roasting pan saute in 1/4 cup olive oil 1 whole onion and several cloves of garlic. Place pieces of chicken which have been seasoned with salt, pepper and oregano into roasting pan. Cook, uncovered for approximately 35 minutes.
After chicken has cooked for approximately 1/2 hour add 3 cups rice or noodles and 1 1/2 quarts of water. Cook approximately 20 minutes. After cooking chicken with noodle or rice mixture for 20 minutes add 1 large can tomato sauce or 1 jar homemade tomato sauce. Cook an additional 35 minutes. Serves an entire family.
