CURRY AFRICAN STEW | |
2 lg. pkg. lean stew meat 2 lg. apples (peeled - cut into bite-size pieces) 1 onion chopped 1/2 tsp. garlic powder 1/2 tsp. Tabasco sauce 1 tsp. curry powder 1/4 tsp. ginger 1/2 tsp. cominos seed 1 tsp. turmeric 1/2 tsp. ground chilies 2 beef bouillon cubes 3 cardamom pods 1 lg. can whole tomatoes 1 lg. can "Veg-All" (frozen vegetables can be used) Mix all ingredients (add vegetables last 30 minutes) with stew meat and small amount of water, simmer 1 1/2 hours. Prepare rice to serve 10 to 12. In individual small bowls, prepare following to be used as toppings for stew: Chopped green peppers Dry roasted peanuts Chopped hard boiled eggs Cubes of pineapple French fried onion rings Coconut Grated cheddar cheese Chopped onion Bite-size pieces of bananas Serve stew over rice - add toppings - have fun! |
