SUGARLESS CAKE 
1 (12 oz.) can 100% apple juice concentrate
1 (12 oz.) can 100% pineapple juice concentrate
1 c. chopped dried fruit, soaked in hot water 15 minutes & drained
2 c. fresh grated zucchini (1 lg.)
3 c. flour
3 tsp. baking powder
1 tsp. baking soda
1/2 c. butter, melted
1 beaten egg
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Place thawed juice in a large mixing bowl and add remaining ingredients, blending each. Pour into 9 x 13 inch greased pan. Bake at 350 degrees for 40 to 45 minutes. Test center with toothpick.
