PINEAPPLE-COCONUT PIE 
3 lg. eggs
6 tbsp. butter, melted
3 tbsp. all-purpose flour
1 1/2 c. sugar
1 c. flake coconut
1 c. crushed pineapple (drained)
1 unbaked 9 inch pie crust

Beat eggs until thick and lemon colored. Stir in butter, flour, sugar, coconut and pineapple. Mix well.

Pour mixture into pie crust and bake in preheated oven at 350 degrees for 40 minutes or until filling sets.

For serving, garnish top with pineapple slices if desired.
